Every bottle traces to
a place we walked.

A small distillery making craft gin, vodka and seasonal fruit rakija — organised not by what's in the bottle, but by the route that put it there.

The story behind the name

Roots & Routes waypoint seal

Roots

Macedonian juniper, Berovo plums, wild herbs harvested from the mountains. Simple ingredients used for refreshingly quirky recipes.

  • · Hand-foraged botanicals
  • · Family orchards and small farms
  • · Small-batch distillation

Routes

Spice markets in Jordan, a trek through the Himalaya, a quiet beach in Sierra Leone. Every route leaves a trace in our bottles — and every bottle traces back to its route.

  • · Six routes, six gins
  • · Coordinates, dates, field notes
  • · One founder from each side of the Atlantic

From orchard to bottle

A slow, patient process.

Fresh botanicals, fruits, herbs and juniper berries arranged for distillation
  1. 01

    Walk first, distill later

Every bottle starts with a road. A coordinate, a date, a notebook page. Then we go home and figure out the recipe.

  2. 02

    Local ingredients

Foraged botanicals, family-orchard fruit, Macedonian grain — chosen by hand, in season.

  3. 03

    Fermentation

Slow, wild-yeast fermentation in oak vats and stainless tanks. We wait until the fruit is ready.

  4. 04

    Distillation

Small-batch copper-pot stills. Every run is cut by hand — only the heart is kept.

  5. 05

    Bottling

Rested in glass, labelled by hand, signed and dated. Each bottle wears its route.

Botanical explorations

A small atlas of flavour.

Every gin starts with wild juniper and water from Macedonia. The rest of the recipe is built from memory — botanicals, herbs and spices chosen not because we picked them off the road, but because they capture the spirit of the places that inspired each route.
